Congolese Beans and Rice

Saute red onion in olive oil.

Add green pepper

Add tomato paste

let the tomato paste turn the oil red

Add a little water to make a sauce - maybe 1 c?

add 1 tsp garlic salt

Add a little more water and simmer until veggies disappear.


When it looks like this, add it to pre-cooked (beans you have already boiled). Add 3 bay leaves, stir, cover and simmer for thirty minutes.


Serve with rice, boiled green bananas (see recipe), and hot sauce.
