5 lb. chicken bone-in leg quarters (legs and thighs)
3" peeled ginger, peeled
3 limes
3 tomatoes
4 large white onion
2 small handfuls cilantro, chopped
1 1/2 heads garlic, peeled
7 tsp salt
1/2 tsp turmeric
1/2 tsp turmeric
4 cups plus 2 Tbsp plain yogurt
1/4 cup plus 4tsp vegetable oil
3 Tbsp butter
9 eggs
Huge aluminum baking dish (20”x12”x3”)
extra large rice cooker or 16x12x3” aluminum baking pan
Extra wide aluminum foil

1 package Shan brand "Special Bombay Biryani"
2 tsp super hot Indian chili powder
4 whole mace pieces
10 green cardamom pods
17 whole cloves
2 1/2 whole star anise
13 pieces Indian cinnamon bark (small, thin 1” pieces)
3 black cardamom pods
1 tsp black cumin
5 bay leaves
4 bay leaves
pinch red-orange food color powder (999 brand or Shwad brand)
16 super hot Thai green chilis (size of pinky finger, very hot)
1/2 cup raw cashews
8 cups basmati rice
