Nicaraguan Pineapple Pork Ribs


I bumped into Jenny Sanchez at our neighborhood grocery store in Freeport, Maine. She's the Nicaraguan grandmother who taught me how to make chancho frito and gallo pinto, two of my favorite dishes discovered in immigrant kitchens so far. "I've been thinking about you," she said.
