Nicaraguan Pineapple Pork Ribs

I bumped into Jenny Sanchez at our neighborhood grocery store in Freeport, Maine. She's the Nicaraguan grandmother who taught me how to make chancho frito and gallo pinto, two of my favorite dishes discovered in immigrant kitchens so far. "I've been thinking about you," she said. "When are we going to cook again?" How about Thursday? This time she taught me pineapple pork ribs. They're sweet. See below for the full story, recipe and how-to-photos.
