Boil the tongue whole with bay leaf, onion, parsley, carrot and salt.

 Try not to become a vegetarian looking at it.

Peel the outer layer off tongue.

Slice crosswise into medallions.

Serve family style with garden salad, mashed potatoes, sautéed mushrooms and pickled horseradish for a condiment.
